Here are the top three Dessert Ideas as voted by my family:

Chocolate Cake


This one of our Dessert Ideas, is voted best by Grandma!

1 1/2 cups flour,

1 cup sugar

1/2 tsp. salt

1 tsp. baking soda

4 Tbsp. cocoa powder with 2 Tbsp butter mixed in

1/4 cup butter

1 egg

1 cup milk (add 1 tsp. vinegar to this)

Mix dry ingredients together. Add the rest of the ingredients and blend until smooth.

Pour into 2 - 8 inch round cake pans (greased and lightly floured)

Bake at 350 degrees for 30 - 40 minutes, or until an inserted toothpick comes out clean.

Cool and frost.

These make great chocolate cupcakes as well:

Pour into muffin tins and bake at 350 degrees for 15 - 20 minutes.

Matrimonial Cake or Date Squares





This one of our Dessert Ideas, is voted best by Grandpa!

1 1/2 cups flour

1/2 tsp. baking soda

1 tsp. baking powder

1/4 tsp. salt

1 cup butter

1 cup packed brown sugar 1 1/2 cup rolled oats

1 tsp. vanilla 1 - 750 gram package raisins

1 package pitted dates

1 cup water

Date filling :

Combine raisins, dates and water in a saucepan. Cook on low temperature for about 5-6 minutes, until thickened.

Let cool slightly, then add vanilla.

Crust and topping:

Sift flour, baking powder, soda and salt. Rub in softened butter with fingers. Add sugar, and oats. Mix well.

Press 1/2 of the crumbs in a greased 13 x 9 inch cake pan and spread the cooled date mixture evenly on top until smooth.

Sprinkle the remaining crumbs on top.

Bake at 325 degrees for 30 - 35 minutes, or until slightly browned on top.



Nanaimo Bars





This one of our Dessert Ideas, is voted best by The Kids!

Base:

1/2 cup butter

5 Tbsp. sugar

5 Tbsp cocoa powder

1 tsp. vanilla

1 egg

2 cups graham wafer crumbs

1 cup coconut

1/2 cup chopped walnuts

Place melted butter, sugar, cocoa, vanilla and egg in a bowl and mix together.

Press mixture into an ungreased 8 inch square cake pan.

Filling:

4 Tbsp. butter

2 Tbsp custard powder

3 Tbsp. milk

2 cups powdered icing sugar.

Melt butter. Mix in custard and milk. Add icing powder and mix until smooth.

Spread evenly over base and allow to harden slightly in freezer for 15 minutes.

Topping:

4 squares bakers semi-sweet chocolate

1 Tbsp. butter.

Place chocolate and butter in a small glass bowl and place in microwave to melt until smooth, stirring every minute.

Be careful, don't overheat. It should only take a few minutes, .

Spread over top of filling and let cool in the fridge.
